What is dry aging?
Dry aging is the process of beef hanging in a carefully controlled cooler for a designated period. Three key transformations take place. First, enzymes break down muscle fibers and render the meat incredibly tender. Second, as moisture evaporates from the carcass, the flavor undergoes a profound enhancement, becoming robust and intensely rich. Last, this process contributes to a safer product, as the extended duration and specific temperature conditions in the cooler make it inhospitable for E.
Why is our beef so good?
Holstein beef has a naturally clean, balanced flavor because the cattle grow at a steadier pace and develop fine, even marbling. When we dry‑age it, that flavor concentrates and the texture becomes even more tender, giving you a deeper, more satisfying beef taste than the typical commodity cuts. This sets us apart from the fast‑grown, bulk-produced cattle industry.
